[摘要]目的 調查了解军队院校社会化保障食堂卫生现况，为制订食品安全风险监测、预警、控制对策和HACCP计划提供参考。方法 2014年10月～2015年3月，以某部院校社会化保障食堂为对象，采取调查表填报与现场抽查相结合的方式，对基本卫生条件、设施设备、卫生管理和食品安全质量控制等情况进行调查、分析，查找主要危险因素及影响程度。结果 44个食堂由26家餐饮企业承包，每家承包1～7个食堂不等。在近2000名从业人员中，炊事员超过40%，服务员占34%，饮食卫生知识测评优良率近75%。日常保障人数45000余人。食堂总建筑面积为16.57万m2，餐厅与操作间的面积比为1.96∶1.00，人均拥有餐厅面积2.25 m2、操作间面积1.71 m2，远大于食堂面积人均≥2.4 m2的标准，其中功能间齐全的有29.55%（13/44）。所有食堂卫生管理制度健全，虽都通过IS9000质量认证，但尚无一家企业建立HACCP计划。结论 军队院校社会化保障食堂硬件设施与设备条件得到明显改善，但布局仍不合理，规范化管理水平有待进一步提高。

Investigation and analysis on the status regarding the sanitation of 44 academy socialized security canteen of a certain institution

[Abstract]Objective To investigate and understand the sanitation status of the academy socialized security canteen in military institutions so as to provide reference for formulating the risk inspection，warning，control strategies and HACCP plan of food safety.Methods From October 2014 to March 2015，academy socialized security canteen of a certain institution were selected as the research group.The basic saniation condition，facilities & equipments，sanitation management and quality control of food safety and so on were investigated and analyzed through the form of questionnaire and spot check，the main risk factors and the degree of influence were found.Results The 44 dining halls were undertaken by 26 catering industries with one to seven canteens undertaken for each one.Among nealy 2000 employees，the number of cook were more than 40%，and servants accouted for 34%.The excellent and good rate of food hygiene knowledge evaluation were nearly 75%.The number of daily people were more than 45000.The total construction area of canteen were 165 thousand and 700 cubic meters.The area ratio of canteen and operation room was 1.96∶1.00.The possessed per capita canteen area was 2.25 cumbic meters，the operation area was 1.71 cumic meters，which was far more than the per captia standard of greater than or equal to 2.4 cumbic meters，and the rate of 29.55% （13/44） had complete function room with complete sanitation management system.HACCP was not eastablished in a single enterprise though having passed IS9000 quality certification.Conclusion The hardware facilities and facility condition obtain obvious improvement regarding socialized secuity canteen of military institutions，however，the overall arrangement is still ueasonable so that standardized management standard needs to be further improved.
